Chad’s Chilli Enchiladas

Serves 4

These spicy enchiladas will put the bounce back into your game. This dish tastes fantastic with a tomato, lettuce and cucumber salad and Wildcat potato wedges.

Ingredients:

  • 3 garlic cloves
  • 1 onion
  • 1×15ml spoon vegetable oil
  • half a fresh chilli
  • 1×5ml spoon cumin powder
  • 1×5ml spoon cayenne pepper
  • 250g minced beef
  • 400g chopped tomatoes
  • 225ml water
  • 220g kidney beans
  • juice of half a lime
  • 1 dried chilli
  • 2 spring onions
  • 1×5ml spoon oregano
  • 100g Cheese
  • 4 corn tortillas

Equipment:

  • Chopping board
  • Sharp Knife (make sure you ask an adult to help you)
  • Large Saucepan
  • Small Saucepan
  • Small bowl
  • Tin opener
  • Juice Squeezer
  • Frying Pan
  • Grater

Method:

  1. Chop the garlic into small pieces
  2. Chop the onion into small cubes
  3. In a large saucepan fry the garlic in 1×15ml spoon of vegetable oil. After a minute when the garlic is softened remove a third of the garlic and keep to one side as this will be used to make the salsa.
  4. Add the onion and fry until softened
  5. Chop the fresh chilli and add the spices (cumin and cayenne pepper)
  6. Add the mincemeat and cook till it browns
  7. Add half the tomatoes and water.
  8. Cook till the liquid dries up (roughly 15 – 20 minutes on a medium heat)
  9. Add the kidney beans and cook for a further 5 minutes
  10. To make the salsa chop the dried chilli and spring onions. Put them into a small saucepan with the remaining chopped tomatoes, garlic, lime juice and oregano. Cook for 15 minutes
  11. Grate cheese and set aside.
  12. Heat a small frying pan. When it’s hot, put a corn tortilla in the pan and turn after 30 seconds (This step is optional)
  13. Place 3×15ml spoons of the mince mixture into the centre of tortilla and roll it up into a cylinder shape. Then place in an oven dish
  14. Repeat this for the three remaining tortilla wraps
  15. Pour the salsa mixture over the wraps and sprinkle with cheese
  16. Put in the oven for 15 minutes at Gas Mark 6
  17. If you want the cheese to be slightly browned place under the grill for a couple of minutes

Top tips

Heating the tortillas in a dry frying pan (no oil) will make the tortillas softer and easier to roll.

Use the larger shaped dried jalapeño peppers
