Gabriella’s Brain Boosting Breakfast

Serves 1

Muesli makes a light and healthy start to the day and keeps you topped up until lunch. You can add a variety of fruit and nuts depending on what is available or your favorite.

Remember to check that none of your friends or family are allergic to nuts before you make this recipe. The nut ingredients are optional.

Ingredients:

  • Water
  • 1×15ml spoon raisins
  • 150g thick natural yoghurt
  • 1×5ml spoon clear honey
  • 70g rolled oats
  • 3×5ml spoons of chopped almonds or hazelnuts (optional)
  • 3×5ml spoons pumpkin seeds
  • 1 passion fruit
  • 1 banana
  • Whole almonds to garnish (optional)

Equipment:

  • Kettle
  • Measuring spoons
  • Mixing bowls x 2
  • Weighing scales
  • Wooden spoon
  • Sharp knife (please get an adult to help you)
  • Chopping board
  • Teaspoon
  • Colander

Method:

  1. Boil the kettle.
  2. Put the raisins in a mixing bowl, pour on just enough boiling water to cover them and set aside.
  3. In another bowl, stir the yoghurt, honey, rolled oats, nuts (optional) and seeds together.
  4. With a sharp knife, halve the passion fruit and using a teaspoon, scoop out the seeds and pulp and add them to the yoghurt mixture.
  5. Drain the raisins and add them to the mixture.
  6. Peel the banana and cut it into slices. Add the sliced banana to the mixture but keep a few slices back for decoration.
  7. Gently stir all the ingredients together.
  8. Spoon into a bowl and decorate with almonds (optional) and slices of banana.

Top tips

If you like sweeter muesli, drizzle with a little honey before eating.

Something to try next time

Why not flavour the yoghurt before adding it to the mixture by blending 100g of soft fruit or berries, such as raspberries or strawberries.
