Taylor’s Thai Salad Dressing

Serves 4

This is the dressing to go with Taylor’s Thai Noodle Salad.

Ingredients:

  • 1×5ml spoon sweet chilli sauce or honey
  • 50ml sunflower oil
  • 1×15ml spoons soy sauce
  • 15ml lime or lemon juice
  • 2cm piece fresh root ginger
  • 1 garlic clove
  • 1 quarter teaspoon dried chilli flakes (optional)

Equipment:

  • Scissors
  • Grater
  • Garlic crusher
  • Juice squeezer
  • Small bowl
  • Whisk
  • Jar/container with tight fitting lid (optional)

Method:

  1. Place the coriander in a mug and finely cut with scissors.
  2. Remove the peel from the ginger and grate finely.
  3. Peel and crush the garlic.
  4. Squeeze the juice from the lime or lemon.
  5. Combine all the ingredients for the dressing in a small bowl and whisk. Alternatively place in a jar with a lid and shake well. Taste and adjust the seasoning.

Top tips

Add more soy sauce to your dressing for a stronger flavour.
