Place the coriander in a mug and finely cut with scissors.
Remove the peel from the ginger and grate finely.
Peel and crush the garlic.
Squeeze the juice from the lime or lemon.
Combine all the ingredients for the dressing in a small bowl and whisk. Alternatively place in a jar with a lid and shake well. Taste and adjust the seasoning.
Top tips
Add more soy sauce to your dressing for a stronger flavour.
